We love good Italian food, and we want to share that passion with our guests. We have invested a lot of time and effort to find the highest quality ingredients to make the best Pizza al Taglio in Zurich.
Our pizza base is very light and is prepared the traditional artisanal way with fresh, healthy, local ingredients. We combine the best of traditional preparation methods with fresh and tasty topping ideas.
We make pizza for everyone, and everyone from students to office workers, families and visitors to party goers, every slice of Pizza al Taglio comes with a warm Italian welcome as standard.
As food lovers, we have set ourselves the goal of turning our passion for good food into action. After years of experience in classic gastronomy and many attempts to produce the best pizza base to complement our fine toppings, we sold our first pizzas back in 2016 from our very cool food truck. We took the truck to many events and parties allowing many more people to experience and enjoy the true taste of Pizza al Taglio.
Things have moved on since then. And while we are still out and about with the food truck we now have our own pizza base at the Bridge in Europaalle, Zurich. We are there for you every day except Sundays from 11am to 8pm. So why not visit us to enjoy our fine Pizza al Taglio and cool products like our very special Italian beer?
To do full justice to the fine ingredients we use for our toppings we insist on the highest standards for our pizza base too. We use simple, honest, and high-quality ingredients and then let the taste speak for itself.
Our flour is freshly milled from local wheat using traditional methods. The wheat germ is retained, which makes the flour particularly healthy and easy to digest. The wheat germ, the most valuable part of the grain, contains more than 70 vitamins, vital substances, and trace elements. We get our flour from the historic Mühlerama Mill in Zurich Tiefenbrunnen.
We rely on a traditional process to make our dough, which makes the preparation a little more time-consuming. We use a natural fermentation process involving little yeast, with a high-water content and long rest periods. We do not use any artificial leavening agents, which means the dough takes up to 72 hours to rise and makes the pizza base light and very easy to digest. Why not come and put us to the test?
Our olive oil is made in Italy by small local producers. The olives, one of the most valuable varieties in Sicily, are cold pressed by hand on the same day they are picked. The high-quality virgin olive oil is not filtered to preserve the intense fruity taste and antioxidants.
Here we are very lucky. The drinking water in Zurich is rather soft and of an excellent quality. Zurich water is tested regularly to ensure its purity.
